The man behind the beautiful renovation and design of Al Casale is Elio. During the two years of construction & renovation, he successfully maintained the warmth of the interior. Not only is he the creator of this beautiful building and refurbished interior, but he also generates the menus and dishes that are served. Since 1963 Elio has been in the hospitality, restaurant and wine industry creating over 12 successful restaurant in the Southern Ontario area such as Prego, Joia, Mamma Mia, etc. Throughout his career, he studied the theory and process of wine making in Italy through which, he received his Doctorate of Oenology - Grand Maestro Sommelier.
